Description: Starch sodium octenyl succinate is produced by the reaction between starch and octenyl succinic anhydride. The introduction of octenyl succinic acid groups into the starch molecular chain imparts both hydrophilic and hydrophobic properties, making it an amphiphilic compound with strong emulsifying effects. It exhibits good water solubility and stability in both cold and hot water.
